Ingredients

    1 medium onion, chopped
    1/2c chopped sun-dried tomatoes in olive oil
    3/4c chopped carrots
    salt and pepper to taste
    1T smoked paprika (or to taste)
    1 can white cannellini beans, rinsed and drained
    4 cups chicken broth
    1/4c fresh chopped oregano
    3/4c frozen peas
    1/2c frozen chopped kale

Directions

Saute onion, tomatoes and carrots until slightly soft. Add beans, smoked paprika, chicken broth, and salt and pepper. Simmer for 20-25 minutes. Add oregano and puree with an immersion blender. Add peas and kale and simmer for 5 minutes or until kale is soft. Let cool and serve.
