Ingredients

    canola oil
    onion-diced
    garlic -minced
    bell pepper (any color, but bright is better)-chopped
    Morning Star Farms veggie crumbles frozen
    Jalapeno died
    an of fire roasted diced tomatoes
    cumin powder
    other yummy spices
    salt and pepper
    spinach or any leafy green
    any other fresh salad veggies you like
    salsa
    Plain Greek yogurt

Directions

Heat oil in skillet over medium heat. Add onion, then garlic and sautee until almost soft, about three minutes. Add bell pepper and jalapeno and pinch of salt and sautee until tender. Add veggies crumbles and tomatoes and juice (juice will begin to evaporate) and cook until thoroughly heated. Add cumin and other desired spices (i like chipotle powder). Cook until taco meat consistency and allow to cool for two minutes. Toast tortillas in oven and slice into strips. Scoop filling onto bed of greens. Add other desired veggies (I like raw onion and tomato. Add sliced avocado, dollop of greek yogurt, salsa and sliced tortilla strips. Season with salt and pepper, and lime juice if desired.
