Ingredients

    2 lbs skinnless boneless chicken breast
    1 cup italian dressing
    1/2 to 1 T cumin
    1/2 to 1 T chili powder
    1/2 T garlic powder
    1 packet ranch dressing
    1/2 Cup Water
    2 Cans Black Beans

    8 cups Romaine Lettuce
    1 Cup Green Onions
    1 Tomato
    1 Cup Mexican Cheeses

    2 Tortillas
    Dash of Salt
    Pinch of red pepper flakes
    1 teaspoon Olive Oil


Tips

The dressing for this salad is equal parts salsa and Walden Farms No Calorie Thousand Island Dressing.


Directions

Place Chicken in Crock Pot
Mix first 6 ingredients in bowl, pour over chicken
cook on low about 6 hours, until chicken shreds easily.
Shred chicken in pot.
Add rinsed black beans. Stir and cook uncovered about 1/2 hour.

Slice the tortillas into 1/4 inch strips. Put into plastic zip bag. Add salt and oil. Mix well. Spray cookie tray with nonstick spray. Line with tortilla strips. Bake at 350 degrees for 10 minutes.

Put a cup of lettuce on each plate.
Top with: 1/8 of the chicken
1/4 C Cheese
1/8 C green onions
1/4 C chopped tomato
1/8 of the tortilla strips
