Ingredients

    3 tablespoons butter
    3 large eggs
    2/3 c. nonfat milk
    3/4 c. flour
    1 tsp.vanilla extract
    1 cup fresh fruit (halved strawberries / bananas or berries)

Directions

Preheat oven to 450 degrees. Melt the butter in a 9-inch deep dish pie plate in the oven, watching not to scorch butter. Meanwhile, whisk eggs and milk together. Sift the flour, whisking until well combined. Mix in the vanilla extract.

Remove the pie pan from the oven, pouring in the egg mixture. Place on center or low er shelf and bake for 18 minutes, or until puffed and golden brown.

Remove from oven and fill the center with fresh fruit. Banana is good with the strawberries.

Finish, if desired, with sprinkles of powdered sugar and dollops of whipped cream - these calories not included in total.
