Ingredients

    3 ounces - baby portabella mushrooms, chopped
    1/4 cup - white onions, chopped
    1 medium - tomato, chopped
    1/2 cup - green peppers, chopped
    1 medium - carrot, chopped into very small pieces.

    seasoning:
    1 tsp - red pepper flakes
    1 TBSP - soy sauce
    1 tsp - smoked paprika
    salt and pepper to taste

Tips

If you have more time and want more flavor depth:
1) start with onions. wait until translucent.
2) add garlic. wait till cooked
3) add carrots and (optional) celery. let cook until soft
4) add rest of ingredients (not seasoning until later.)


Directions

without using oil:
1) add all ingredients, except seasonings, to a non-stick pan.
2) Add just a little bit of water (barely until pan in 1/8th covered), and stir for about 5 min.
3) Add in soy sauce, then the pepper flakes and paprika.
4) stir 5 more minutes - keep adding a minute amount of water as needed. keep an eye on it - it will evaporate QUICKLY
5) at the end, taste and appropriately season with ground pepper/salt.

Serving Size: makes one serving as a pita stuffer
