Introduction

Number of Servings: 1

Ingredients

    Egg, fresh, whole, raw, 2 large (remove)
    Asparagus, fresh, 6 spear, medium (5-1/4" to 7" long) (remove)
    Olive Oil, .5 1tsp (remove)
    Cilantro, raw, 1 tbsp (remove)
    *BelGioioso Pamigiano Reggiano, 13 gram (remove)
    *Cholula, 1 tsp (remove)

Directions

1. Sautee asparagus in oil
2. Scramble eggs with cilantro and freshly ground black pepper
3. Grate cheese
4. Add eggs over asparagus in nonstick pan
5. When solidified, flip over. Spray a plate with nonstick and cover pan. Flip over and frittata will fall out onto plate and then slide back into pan, cooked side up.
6. Add parmesean cheese to top and cover with lid to melt. Turn off heat.

Serving Size: Makes 1 frittata
