Ingredients

.5 cup 2% milk
1.5 tsp lemon juice
1 cup whole wheat flour
.5 tsp sugar
1 tsp baking powder
.25 baking soda
pinch of salt
2 tbs whipped butter
Directions
Mix the milk with the lemon juice. Set aside for 5-10 minutes.
Preheat the oven to 400 F. Coat a baking sheet with cooking spray or line it with a silicone baking mat.
In a large mixing bowl, combine the flour, sugar, baking powder, baking soda and salt. Work the butter into the dry ingredients using a pastry cutter or two forks. Add the milk mixture and stir until just combined.
On a lightly floured cutting board, roll out the dough, gently patting it into a flat 4 inch circle, 1 inch thick. Using a 2-inch cookie cutter or the rim of a glass, cut the dough into four circles. Gather and roll out the remaining dough, cut out two final biscuit.
Bake the biscuits on the prepared baking sheet for 14-15 minutes or until lightly browned on the bottom. Serve warm or allow to cool before freezing and reheat in a toaster oven until just warmed.
