Ingredients
-
16 oz. Frozen cooked shrimp (thawed)
1 T. Olive oil
2 cloves fresh garlic, sliced or minced
14.5 oz. can diced Fire-roasted tomatoes
Red pepper flakes to taste (approx. 1/2-1 tsp.)
8 oz. Ronzoni Smart pasta (thin spaghetti or angel hair)
1/4 c. Parmesan cheese
Tips
This is also good using chicken instead of shrimp and adding a small can of drained sliced black olives if you like.
Directions
Cook pasta to al dente according to package directions, drain (reserve a little of the cooking water for the sauce) and set aside.
Heat olive oil in large skillet over medium heat, add red pepper flakes, sliced or minced fresh garlic and saute until just beginning to brown, about 1-2 minutes (be careful not to burn the garlic).
Add tomatoes and shrimp, cook until heated through about 5 minutes.
Toss in cooked pasta and reserved cooking liquid (add to your own preferred consistency, I only use about 1/4 C.) Sprinkle with Parmesan cheese before serving.
