Introduction

We were making pasta salad and ran out of Italian dressing. In order to make it more tasty, we added some ingredients which actually made it healthier! Ingredients

    1 1/2 cups Healthy Harvest Rotini pasta
    1 1/2 cooked boneless, skinless chicken breast, chopped
    6 oz (~24 each) grape tomatoes
    2 stalks fresh broccoli, chopped
    2 oz frozen mixed vegetables (beans, peas, etc)
    1 large carrot, diced
    3/4 cup Italian dressing
    1/2 cup Greek yogurt, plain
    1/2 cup milk
    1 Tbsp Italian seasonings
    1 tsp dried garlic

Tips

This is even better the next day when the spices and wet ingredients have had time to blend together.


Directions

Cooking the pasta according to package directions.
Chop the chicken breast and broccoli. Dice the carrot. If you will be eating this right away you will want to thaw or just slightly heat the frozen vegetables.

Mix all the ingredients together with the Italian dressing, Greek yogurt, milk and spices. Serve.
