Number of Servings: 2

Ingredients

    8 oz. of fresh salmon
    1/4 cup of raspberries
    1/4 cup of blueberries
    1/4 cup of sliced strawberries
    1/8 cup chopped onions
    5 asparagus spears, cut into 1 inch pieces
    1/8 cup of orange juice (optional)
    2 tsp. of peanut oil

Directions

Heat oil in a pan over medium heat. Add onions and brown slightly.
Add salmon and asparagus, cook for 1-2 minutes.
Add berries. They will release juice, but if you find dit is a little dry, add the orange juice.
Cook until the salmon is cooked through, about 5-8 minutes.
Serve over brown rice.

    Very Good
    I think it has to be a little sweeter- the berries made the dinner tart. I enjoyed the appearance and the aroma, but again...a little sweetener might of made it more enjoyable.
