Ingredients

    18 small carrots
    1/2 cup butter
    1/2 cup splenda
    1/2 teaspoon salt (optional)
    1/3 teaspoon cinnamon
    1/3 cup boiling water


Directions


Scrape or pare carrots and place into a casserole, Cream butter, splenda, salt, cinnamon. add water, and blend well. Pour over carrots,cover and bake in oven at 350 F for 1 1/2 hours.
This will serve 6 to 8 people.

    I really liked this recipe. I made it on the side along with apple pork chops. Very good healthy meal. And my kids loved it. I will definately make this a part of my regular monthly menu!! - 1/30/09
