Introduction

Number of Servings: 4

Ingredients

    4 C water
    4 tsp. vegetable bouillon paste
    3 TBS soy sauce
    1/4 C mushrooms (I use chinese mushroom mix)
    1/2 tbs garlic chili sauce
    1/4 tsp white pepper
    1/4 c rice vinegar
    1/3 c bamboo shoots, julienned
    3 oz tofu, cubed
    2 TBS cornstarch and 2 TBS water
    1 egg, beaten
    2 green onion stalks
    1/2 tsp sesame oil

Tips

I didn't add all of the veggies or the bouillon paste, those will add marginal calories. I like to add extra mushrooms and onions to make it filling without extra calories.


Directions

bring broth to a boil
add soy sauce, mushrroms and garlic chili paste
simmer for 5 min
add pepper, vinegar, bamboo, tofu
simmer for 5 min
combine cornstarch and water til smooth, add, stirring well
simmer 5 min
beat egg in a cup, pour slowly into soup
wait 30 sec, stir in green onions and sesame oil
serve

Serving Size: makes 4 good-sized servings, however it's so low cal you can gobble it up :0
