Introduction

Ingredients

1 tbsp. olive oil
4 cups zucchini - sliced
8 oz. package fresh mushrooms
2 cups marinara sauce
1-1/2 cups French Fried Onions
1/2 cup ricotta cheese
1/2 cup Parmesan cheese
1/4 cup milk - 2%
1 egg
Directions
Preheat oven to 375 degrees. Grease oblong baking dish with non-stick spray.
Stir fry zucchini and mushrooms in olive oil. Add marinara sauce and 3/4 cup French Fried onions. Place in baking dish.
Combine cheeses, milk and egg in medium bowl. Mix until well blended. Pour cheese mixture over vegetables.
Bake, uncovered, 30 minutes or until cheese layer is set. Sprinkle 3/4 cup French Fried onions on top and bake an additional 3-5 minutes until onions are golden.
Serving Size: cut dish into 12 servings
