Ingredients

1 tbsp. Rapid Rise Yeast
1 tbsp. honey
2 1/2 cups very warm water
1 1/2 tsp. salt
1 tbsp. oil
6 to 7 cups whole wheat flour
Directions
In large mixing bowl place about 5.5 cups of flour, yeast, and salt. Mix. Stir in very warm ( about 120 degree ) water and honey. Mix and add flour a little at a time until dough pulls from sides of bowl and easily forms dough ball.
Dust a surface with flour and knead dough for about 5 minutes. Place dough in large, oiled bowl, and let rise for about an hour.
punch down dough and divide into 20 equal pieces. Roll each into a ball and roll out on a floured surface about 1/4 inch thick.
Place circles on greased cookie sheets and let rest 30 to 45 minutes. Heat oven to 450 degrees. Just before baking, turn the pitas over. Place one pan on top rack of oven and the other on middle rack. Bake 8 to 10 minute, switching position of pans halfway through. Pitas should be fairly soft and lightly browned and puffed in middle. Remove from pans and wrap in clean dish cloth or store in paper bag to keep soft. Slice though center and fill with your choice of fillings. These may be frozen wrapped in foil . Thaw in 400 degree oven for 15 minutes to use.
