Introduction

Ingredients

    One medium yellow onion- chopped
    6 oz fresh squeezed orange juice
    Juice of 2 limes
    2 TBSP olive oil
    12 cloves garlic, peeled, smashed, roughly chopped
    16 boneless, skinless chicken breast
    Zest of one lime
    zest of one orange
    1 tsp sea salt
    1 tsp freshly ground pepper

Tips

*cooking times will vary with grills and temperatures- please make sure to cook your chicken through, but not over cook it.


Directions

Rinse chicken, trim off any fat.

in a large bowl, stir together all ingredients and allow to marinate for 30-45 minutes.

Preheat grill. Place chicken on the hot grill and cook until cooked through. I also carmelized the onions in a pan in the kitchen to serve on top of the chicken.

If you'd like, you could squeeze a bit more orange juice over the top before serving. (I did)
