Number of Servings: 1

Ingredients

    1 scoop 100% whey protein powder (needs about 25 g protein)
    1/2 t baking powder
    2 t almond meal (can sub in hazelnut or coconut flour)
    2 t brown rice flour (can sub in cocoa, or powdered peanut butter)
    1/4 t cinnamon (omit if using cocoa or peanut butter powder, or a protein powder other than vanilla)
    2 t dried egg whites
    1 T powdered buttermilk
    1/3 cup water

Tips

using casein protein powder can result in a denser cake that takes longer to cook.


Directions

thoroughly mix all ingredients in microwaveable mug. Microwave 90 seconds, or until cake has risen and is lightly firm to touch. May be slightly gooey. (Yum!)
