Ingredients

    2 lbs Kirby cucumbers, sliced into short spears
    1/2 c. Red Onion Raw, sliced & quartered
    6 Sweet mini peppers, seeded & quartered
    4 cloves garlic, sliced
    1 c. White Vinegar
    1/2 c. Cider Vinegar
    1 1/2 c. Water
    1 Tbsp. Mustard seed, yellow
    1/2 Tbsp. Celery seed
    2-3 Tbsp. fresh Dill
    4 dried Red Chili peppers
    1 Tbsp. Kosher salt, coarse

Directions

In a rectangular Glad-ware container, layer 1/2 cukes, then 1/2 onions, then 1/2 peppers & 1/2 garlic & 1/2 Dill. Repeat. Put red chilis along edges. Heat all other ingredients in pan on stove. Bring to a boil. Reduce to simmer until salt is dissolved. Let cool slightly. Pour liquid over veggies. Put in refrigerator and chill for 2-4 days. Remove red chilis before eating.
