Ingredients

    8oz cream cheese
    medium red pepper
    1.5 cup zucchini
    1.5 cup yellow squash
    2 jalapeno peppers
    2 green onions
    20 leaves of spinach
    .5 oz of dried tomatoes
    2 tablespoons olive oil
    salt
    pepper

Tips

Serve on pita or wheat bread.

You can substitute almost any veggies.


Directions

Chop zuchini squash and peppers.

Drizzle with olive oil and cook at 350 for one hour, flipping half way through.

Let veggies cool

Puree the everything together until mostly smooth, but a little chunky.
