Ingredients

    2 tbsp. Splenda
    2 tbsp. Cocoa powder
    dash cinnamon
    1 egg
    1 tbsp. milk
    1 tsp. vanilla extract
    1/4 tsp. baking powder

Tips

This time is for my microwave. Play with yours until you get it right.

A recipe with sugar and not Splenda takes a bit longer to cook.
Adding 1 tbsp. of shredded coconut is pretty good. You may want to add a tiny bit more milk.
Almond extract will give you a chocolate covered cherry cake.

I use soymilk, Splenda, and imitation vanilla extract. I have also used sugar, milk, and real vanilla. It all works great.


Directions

Mix 2 tbsp. Splenda, 2 tbsp. cocoa, and dash of cinnamon in a small (16 oz.) bowl
Tilt mixture to side and beat 1 egg
Add 1 tbsp. milk and 1 tsp. vanilla extract
Mix together
Quickly mix in ¼ tsp. baking powder
Microwave on high 55 seconds
