Introduction

Ingredients

    3 eggs
    1 cup egg whites
    6 oz evaporated milk
    1 tbsp thyme
    1tsp ground dry mustard
    1 onion
    2 packages mushrooms (crimini, shiitake , button)
    2/3 cup gruyere cheese
    1 tsp salt
    1 tsp pepper
    2 cups cooked spinach (optional)
    1 tsp ground nutmeg (optional)

Tips

Can add spinach and ground nutmeg. However, makes quiche a little watery.


Directions

Preheat oven to 350. Grease pie plate with cooking spray. Cut onion into thin qtr moon slices or to your desired shape. After rinsing mushrooms, cut into smaller pieces. Add both onion and mushroom to a pan with 1 tbsp olive oil and sauté until tender. If adding spinach, add once mushrooms and onions are cooked. In a bowl whisk together eggs, egg whites, evaporated milk, thyme ( remove leaves) ,salt and pepper. Transfer vegetables to bottom of pie plate. Pour egg mixture over the vegetables. Top with cheese. Bake for 30 minutes at 350.
