Ingredients

    Meatloaf:

    1 lb lean ground turkey
    2 Tbsp Italian Style Breadcrumbs
    2 Tbsp skim Milk
    1/4 cup fat free cheddar cheese, shredded
    3 egg whites
    1/2 medium Onion, diced
    2 cloves Garlic, minced
    1 Tbsp Mild Green Chilis, diced
    1 medium Carrot, shredded
    1/2 teaspoon Southwest Seasoning
    1/2 teaspoon Cumin
    2 Tablespoons fresh Cilantro, chopped
    a few twists Black Pepper

    Spicy Yogurt Dip

    1/2 cup nonfat Greek Yogurt
    2 Tablespoons low sodium Taco Seasoning Powder

Directions

Mealoaf:

1. Preheat oven to 350 degrees. Saute onions until golden. Add garlic and green chilies cook 1 minute. Set aside to cool.

2. Soak breadcrumbs in milk for 1 minute. Add egg whites, soaked breadcrumbs, cooled veggies, carrots, seasonings and cheese to turkey and mix until combined.

3. Divide into 6 equal meatloaves.

4. Bake for 45 minutes for until cooked through.

Yogurt Dip:

1. Mix yogurt and seasoning together and allow to sit in refrigerator for at least 30 minutes.
