Beets are one of the healthiest foods you can eat, and I like pickled beets best. I used to avoid them because of the high sugar content, but Splenda has brought them back to our table. Hurray! Ingredients

    6-8 medium-sized beets or 2 cans
    1/4 cup apple cider vinegar
    1 cup Splenda
    1/2 tsp mustard
    salt, dash
    black pepper, dash

Tips

These are habit-forming, and if you eat the recommended 1 beet daily, just don't be alarmed if your urine turns pink. This is a harmless side-effect of eating beets, esp in people with iron deficiency. It's well worth all the health benefits, though! Check out all of them here:

Directions

Use gloves when handling beets to keep your hands from staining. Trim tops of fresh beets to 1" and roots to 2" to reduce bleeding. Cut into quarters and steam for just 15 minutes (additional heating time will reduce health benefits). A fork should easily be inserted in center of cooked beets. On cutting board, rub off skins and chop into slices or bite-size pieces and place in a bowl for refrigeration, or into jar(s) if you're canning them. Mix remaining ingredients together and pour over beets. Let marinate at least an hour, but they are best if let set overnight...the longer they marinate, the better they taste! Keeps for about a week in the refrigerator, or months if you can them.
