Introduction

A basic chili (if you are not from a chili-obsessed culture that has rules). I burned the bottom of it but I think it actually tasted better. A basic chili (if you are not from a chili-obsessed culture that has rules). I burned the bottom of it but I think it actually tasted better.

Ground beef, extra lean, 350 grams
Mushrooms, fresh, 4 cup, pieces or slices
Yellow Sweet Corn, Canned, 1 can
    Beans, red kidney, 1 can
Tomato Paste, 0.25 cup (made into frita sauce with vinegar, cumin, and a little maple syrup)
Maple Syrup, 0.25 cup (a little less)
    Beans, white, 2 cans
    Canned Tomatoes, 1 med can

    Seasonings (approximate):
    Cumin seed, 1 tbsp
    Chili powder, 1 tbsp
    Thyme, ground, 1 tbsp
    Smoked Paprika, 0.25 tsp
    Celery Salt, 1 tsp
    Garlic powder, 2 tsp
    Black pepper to taste

    Wensleydale Cheese to taste

Tips

It's only lactose free if you leave off the cheese at the end!

Directions

Brown meat in larger-than-you-think-you-need saucepan w about a quarter of each of the seasonings (incl. salt). Add tomato paste, mushrooms, another quarter of the seasonings. Cook on medium a little. Add tomatoes and another quarter of the seasonings. Cook at least 30 minutes on low. Add beans, corn, maple syrup and the rest of the seasonings. Cook as long as you can stand it before it smells so good you must eat it. Top with grated wensleydale (trust me).
