Ingredients

1/2 lb large shrimp (36-40 ct)
1 med red bell pepper
1 med yellow bell pepper
1/2 lb strawberries
1 small summer squash
8 shiitake mushrooms (whole)
1 small red onion
3-4 oz fresh pineapple
1 10 oz bottle Kikkoman's Sweet & Sour Sauce (35 cal / 2T)
Directions
Thaw shrimp, remove shell & marinate in 1 cup Sweet & Sour Sauce while preparing other ingredients.
Cut tops off bell peppers, remove seeds & cut into 8-16 chunks each.
Cut tops off strawberries. Leave whole if small-large sized, cut in half if extra large.
Cut ends off the summer sqash & chop into 16-24 chunks (about 1/2" wide)
Remove stems from shiitake mushrooms.
Remove skin from onion & cut into 8 wedges.
Cut pineapple into med-large chunks.
Assemble all ingredients onto 8 long skewers & hang skewers across a 9x13" pan, making sure all ingredients are 'inside' the pan.
Baste liberally with Sweet & Sour sauce (left from the shrimp) and bake in a 400 degree oven for 8-10 minutes (shrimp will turn pink).
Makes 4 servings.
