Ingredients

    1/2 cup plain fat free Greek yogurt
    1/4 cup whole-grain mustard
    1/4 cup bread crumbs
    3/4 teaspoon dried marjoram
    Kosher salt and freshly ground pepper
    1/4 cup all-purpose flour
    1/2 teaspoon paprika
    Pinch of freshly grated nutmeg
    3 egg whites
    1 1/2 lb boneless skinless chicken breasts
    cooking spray

Directions

1. Preheat oven to 350F.

2. Whisk the yogurt and mustard in a bowl until smooth; place in fridge while the chicken is prepared.

3. Place bread crumbs in a shallow dish and add the marjoram, and salt and pepper to taste. In another shallow dish, season the flour with the paprika and nutmeg. Stir the egg whites in a third dish. Season the chicken with salt and pepper.

4. Dredge each cutlet in the flour, shaking off the excess. Dip in the eggs and then in the breadcrumbs, pressing to coat both sides. Place on foil lined baking sheet sprayed with cooking spray

5. Place chicken in preheated oven and bake for 30-35 minute, or until internal temperature reaches 165F.

6. Serve each breast with a drizzle of the mustard sauce.
