Introduction

I was looking for a high fiber and protein lunch that was meat free. This is a concoction that I came up with! I was looking for a high fiber and protein lunch that was meat free. This is a concoction that I came up with!
Number of Servings: 4

Ingredients

    1 - 12 oz bag Mann's Broccoli Cole Slaw
    1 can dark kidney beans
    1 can Great Northern beans
    1 small purple onion sliced thin
    1 TBSP canola or olive oil
    1 TBSP sugar (I DO NOT recommend using Splenda for this recipe...it has a strange reaction with the vinegar causing it to have a very bitter taste)
    2 TBSP balsamic vinegar
    1 packet seasoning from low-fat Chicken Ramen noodles

Directions

Drain both beans and rinse well. Add oil, vinegar, sugar and seasonings to a large mixing bowl. Add remaining ingredients and mix well. Cover and refrigerate. The longer it sits the better the flavors. Makes 4 servings.
