Ingredients

    Beef chuck, 16 oz cut into 1-ince cubes
    Olive Oil, 1 tbsp (remove
    *Goya, Pinto beans, I can drained
    Onions, raw, 1 cup, chopped
    Green Peppers (bell peppers), 0.5 cup, chopped
    *365 Organic Diced Tomatoes, 1 can
    Garlic, 3 cloves
    La Victoria Green Chile Salsa, Mild, 1 cup
    *Potato, raw, 4 medium peeled and cut in quarters

Directions

Brwon meat in oil. Combine the rest of the ingredient with beef in crockpot. Cook on high 5 hours or low for 8 hours.

Serve with tortillas and a romaine salad with avocados and orange sections.

Serves 6.

    Very Good
    This is tasty! My family loved it and it will be made again. I had no potatoes on hand so I subbed sweet potatoes and it worked fine. I also put a Tbsp of low fat sour cream and drizzle of shredded mexican cz blend. I prepped meet by cutting away all the fat. I think chicken could be subbed in. Thx. - 4/14/08
