Ingredients

    1 C - grated Squash
    1/4 C - Parmesan Cheese
    1/4 C - Flour
    1 lg - Egg
    1/4 C - scallions (grn. Onions)
    1/4 tsp - onion powder
    1/4 tsp - garlic powder
    dash cayenne
    salt and pepper to taste

Directions

Grate yellow squash into a med. bowl.
Add all ingredients and mix together.
In a hot oiled pan or griddle over med heat add batter and cook as you would a pancake!

Serving Size: makes 1 lg pancake
