Ingredients

2 12oz pkgs of frozen cauliflower
4 oz onion & chives cream cheese
1 tsp salt
1/2 tsp black pepper
Tips
It took far longer to cook the frozen cauliflower in the microwave than I thought it would. About 15 minutes. Next time I might plan ahead and thaw the cauliflower in the refrigerator overnight to cut down on cooking time.
These came out just a tad too thin. Next time I will either drain a little better or wring them out a little bit in a towel before adding to the food processor.
These freeze and thaw perfectly. I froze a cup of these in a small plastic container and then popped them in the microwave for 2 minutes directly from the freezer. They came out perfectly warmed. Just like they were when fresh the night before.
Directions
1. Cook cauliflower until very soft. Either by steaming on stove or in the microwave. Read package directions for recommendations.
2. Drain cauliflower then place in food processor with all the other ingredients.
3. Process to the consistency of your liking. I like it very smooth so I did mine for 2 - 3 minutes.
