Ingredients

2 ripe bananas
1 large zucchini
1/2 cup honey
1/2 cup evoo
1 1/2 cups whole wheat flour
1/2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp baking powder
Tips
You can also sub the extra virgin olive oil for coconut oil.
You can add in nuts if desired.
Directions
Preheat oven to 350 and lightly grease muffin pan.
In one bowl mix wheat flour, baking soda, baking powder and cinnamon.
In another bowl mash bananas and mix with honey and vanilla and oil.
Peel and grate one large zucchini. Squeeze out liquid. Add to the banana mix.
Combine the banana mix with flour mix.
Spoon mixture into muffin pan and bake for 25 mins or until golden and toothpick comes out clean.
Serving Size: Makes 12 muffins
