Number of Servings: 2

Ingredients

2 Chicken Leg Quarters, bone in, skin on
    1 tablespoon unsalted butter, softened
    1 tablespoon seasoning (I use Penzey's BBQ 3000)
    salt and pepper to taste

Tips

Adaptation of recipe found on Martha Stewart's website and have used it time and time again.

Directions

Preheat oven to 450 degrees. Lightly brush a rimmed baking sheet and the chicken pieces with butter. Lay chicken, skin side up, on sheet; season with salt and pepper and any additional spice you'd like to use.

Roast chicken 40 minutes, basting occasionally with pan juices, until an instant-read thermometer inserted into thickest part of the thigh (avoiding bone) registers 165 degrees. Transfer to a platter; loosely tent with foil. Let stand 10 minutes before serving.

Serving Size: makes 2 servings, 1 leg quarter per person

I am another Penzey fan, they really have great spices and herbs. Glad to see a recipe with their product. Love to make these leaving skin on to cook and then off to eat, (for me anyway) Great recipe. Resting meat is a key for 10-15 mins. Thank you - 3/5/17

The recipe calls to cut the lags in two but the picture shows a whole leg
I find this deceptive unless I did not understand the instructions which means they should be cleared
