1 tablespoon seasoning (I use Penzey's BBQ 3000)
salt and pepper to taste
Tips
Adaptation of recipe found on Martha Stewart's website and have used it time and time again.
Directions
Preheat oven to 450 degrees. Lightly brush a rimmed baking sheet and the chicken pieces with butter. Lay chicken, skin side up, on sheet; season with salt and pepper and any additional spice you'd like to use.
Roast chicken 40 minutes, basting occasionally with pan juices, until an instant-read thermometer inserted into thickest part of the thigh (avoiding bone) registers 165 degrees. Transfer to a platter; loosely tent with foil. Let stand 10 minutes before serving.
Serving Size: makes 2 servings, 1 leg quarter per person
