Introduction

Having tried nearly all the protein pancake recipes out there, I knew there had to be something better. These pancakes have a texture closer to what we would consider 'real' pancakes to have. Having tried nearly all the protein pancake recipes out there, I knew there had to be something better. These pancakes have a texture closer to what we would consider 'real' pancakes to have.

Ingredients

    1/4 cup Egg Beaters
    2 Large Egg Whites
    1/3 cup fat free cottage cheese
    1 tsp vanilla extract
    1 1/2 TBS Oat Bran finely ground in a coffee grinder
    1 1/2 TBS Ground Flax Meal
    4 pkts Truvia

Directions

Grind the Oat bran and flax meal together in a coffee grinder until it becomes a fine powder. Blend the egg beaters, egg whites, cottage cheese, vanilla extract, oat bran, flax meal, and truvia. I used a small blender that I use to blend my protein shakes. Cook pancakes on a griddle or non stick pan. This recipe makes 4 pancakes. 2 pancakes equals 1 serving.
