Ingredients

    Sesame Chicken and broccoli:
    1 large chicken breast (mine was 12 ounces) cut into bite sized cubes

    Marinade:
    1 tsp. each: lemon juice, teriyaki sauce, soy sauce, worcestershire sauce, honey
    .5 Tb each: sugar, sesame seeds
    .5 tsp. of garlic powder
    1/8 tsp. black pepper, ginger, cinnamon

    Coat chicken in 1 Tb flour then toss in baggie to marinade for about 1-2 hours.

    Preheat oven to 350 degrees Fahrenheit.

    Place chicken with 10 oz. of broccoli florets on baking sheet. Cook for 6 minutes, turning chicken halfway. Take out and sear in hot pan on high for about 1 minute until chicken and broccoli crisp slightly on the outside.

    For the cucumber salad: slice one cucumber thinly and thinly slice one fourth cup of onion. Toss together in sauce made from:
    .5 Tb parmesan cheese
    1Tb apple cider vinegar
    1 Tb milk
    2 Tb cream cheese (I used whipped since it was easier, may also use sour cream or yogurt)
    1 Tb mayonaise
    generous pinch of garlic powder, dill, and onion powder

    for the dessert:
    1 cup chunked honeydew
    .5 cup blueberries
    .5 cup strawberries
    1 Tb honey
    1/8 tsp. vanilla
    2 Tb baileys Irish cream (heavy cream with a bit of orange works great too!)

Tips

The cucumber salad and fruit dessert are very versatile. You can omit anything and add rice as a side.


Directions

Prep the dessert and cucumber salad. Marinate chicken for about an hour. Turn on oven to 350 and cook chicken and broccoli for 5-6 Sear in hot pan for about 1 minute until slightly crisped.
