This is delicious and very filling and made from farmers market finds. I love pepper and Greek spice so, on those two ingredients, do it to your taste. I hope you like this change of pace! Ingredients

1 Large Red Sweet Pepper
1/4 c diced sweet onion
1/4 c chopped zuchinni
1 med. carrot chopped
1/4 c vegetable broth
1 c brown rice (cooked)
1/4 c tomato paste
1/4 c chopped fresh parsley
1/4 c chopped fresh dill
Juice of one whole lemon
1/4 tsp black pepper
1/4 tsp Salt Free Greek Seasoniong
Directions
Preheat oven to 350.
Cut top off pepper, scrape out seeds and wash.
Put top back on pepper and place in small oven safe dish. Bake for 30 minutes.
While that bakes, sauté the onions, zuchinni and carrot in vegetable broth for about 6 minutes.
Stir in rice and tomato paste and thoroughly coat.
Stir in lemon juice, parsley, dill, pepper and seasoning.
When pepper is ready, remove the top and stuff with rice mixture and put back in oven and bake 30-40 minutes more until pepper is soft.
