Ingredients

1 med Sweet Onions
1 lg Red Bell Sweet peppers
4 med Tomatoes, ripe
1 sm Jalapeno Pepper (optional for heat)
3 tbsp Cilantro, raw, finely diced
Juice of 1 Lime
1/2 tsp ground Cumin seed
1/2 tsp ground Coriander seed
Pinch Red Cayenne Pepper (or Blackening Seasoning), red or cayenne, .125 tsp (remove)
Dash of Salt
Tips
Store in air tight container and chill until ready to serve. Will keep about 5 days in fridge.
Directions
Split sweet onion in 1/2, core and clean peppers and tomatoes. Cook all low and slow on bbq until all are done (onions are tender and translucent, tomatoes an peppers are soft, juicy and tender.) Remove from bbq and cool to room temperature, then remove any charred skins.
Place onion in food processor and pulse to rough chop, then split the tomatoes and peppers and add them with the lime juice and spices (to taste.) Pulse until desired texture.
Serving Size: 1 serving = 2 Tbsp, recipe makes about 32 servings (4 cups or 64 Tbsp)
