Ingredients

    2 Cups chopped Chicken, light meat
    1 Tbsp Olive Oil
    1 tsp Garlic
    1 fl oz Lemon Juice
    1 pkg Stove Top Stuffing Mix
    1 Can Cream of Chicken Soup
    1 Can Cream of Mushroom Soup
    1 2C pkg Shredded Colby Jack Cheese, Low Fat
    4 Tbsp Butter, salted
    2 Cups California Blend Frozen Vegetables (Broccoli, Cauliflower, Carrots)

Tips

Great meal to make with leftover turkey dinner as well.


Directions

In a large skillet; cook chicken in olive oil with garlic.
While chicken is cooking make stove top stuffing in microwave - omit the butter in the recipe.
When chicken is fully cooked, add lemon juice, butter and both cans of soup.
Stir then add frozen veggies - cover and let simmer for 10 minutes stirring occasionally.
Add shredded cheese and cooked stuffing - stir. Allow to simmer and flavors to merge for 10 minutes.

Serving Size: Makes 6 1.5Cup servings
