Ingredients

    Ramen Noodles, 1 container, individual - noodles only, don't use the seasoning
    Pad Thai Sauce, 5 tbsp
    Mushrooms, fresh, 3 cup, pieces or slices
    diced red onion 1 cup, chopped
    1 Red bell pepper, diced
    2 Boneless, Skinless Chicken Breast
    *Kikkoman Lite Soy Sauce, 3 tbsp or Spicy Soy Sauce for added kick
    *Snow Peas, fresh, 1.5 cup
    Fresh cilantro - a must! This adds so much flavor!!
    Fresh Lime
    Diced green onion

Directions

Boil Ramen noodles until they are al dente. They will get soggy if cooked too long. Set aside.

In sautee pan, cook chicken in about 1 cup of water, season with garlic and a little cilantro and a squeeze of lime. Once the chicken is cooked through, dice it up and allow it to brown slighlty in the pan.

While the chicken is cooking, place all of the veggies in a seperate sautee pan with a dash of peanut oil, and a little garlic. Once the veggies are warm and still slightly crunch, combine all above ingredients together.

Combine Chicken, noodles, vegetables, soy sauce and pad thai and stir well Add as much cilantro to your taste.

Top off with a squeeze of fresh lime and the diced green onion.

Makes approx. 4 servings at 316 calories per serving.

To save more calories, omit chicken and add more veggies. Also could try using stock to cook veggies in. I used to also use a scrambled egg added at the end, but omitted to save calories.
