Introduction

This recipe is easy to prepare, also freezes and reheats well. Great for Meatless Monday. The whole wheat lasagna noodles help to fill you up without all the extra calories. Ingredients

    8- Healthy Harvest 100% Whole Grain Lasagna Noodles
    1-TBL Olive Oil
    2-Cups Fresh Spinach, diced
    1/4-Cup diced onion
    1-clove garlic, minced
    1-Lg egg
    1-Cup- Cottage Cheese, 2% Milk fat
    1-Cup- Ricotta Cheese
    1-Cup (3 oz) Mozzarella Cheese, Part Skim, Shredded
    1/4-Cup Shredded Carrot
    1-tsp ground black pepper
    1-TBL Italian Seasoning
    2-Cups Spaghetti Sauce, Classico Tomato Basil

Directions

1) Cook lasagna noodles as per package instructions, then lay out on wax paper or foil to prevent sticking.
2) While noodles are cooking, preheat oven to 350 degrees
3) heat 1 TBL Olive Oil in fry pan over medium heat. Add garlic and onion and stir fry 2 minutes, careful not to let it burn.
4) Add spinach, cover pan and cook approximately 2-minutes, then remove from heat.
5) Beat egg in a large bowl.
6) Stir in cheeses, spinach mixture, carrots, pepper and Italian Seasoning.
7) Pour 1-Cup spaghetti sauce into bottom of 9x13 pan.
8) Spread a thin layer of cheese mixture onto lasagna noodle (approx. 2-3 TBL).
9) Roll lasagna noodle, jelly roll style and place seam side down onto pan.
10) repeat for each noodle.
11) Pour remaining cup of sauce over roll ups.
12) Cover pan with foil and bake 35 minutes or until sauce is bubbling.
