Ingredients

    Pumpkin, canned, without salt, 1.5 cup (remove)
    Banana, fresh, 3 small (6" to 6-7/8" long) (remove)
    Egg, fresh, whole, raw, 3 large (remove)
    Maple Syrup, .5 cup (remove)
    Applesauce, unsweetened, .25 cup (remove)
    Butter, salted, 2 tbsp (remove)
    Vanilla Extract, 1 tsp (remove)
    *All Purpose Unbleached Flour, 2.25 cup (remove)
    *Pumpkin Pie spice, 1 tsp (remove)
    Cinnamon, ground, .5 tsp (remove)
    Baking Powder, 1.5 tsp (remove)
    Baking Soda, 1 tsp (remove)
    Salt, .5 tsp (remove)
    *Nestle Mini Chocolate Chips, 5.33 tbsp (remove)

Tips

**To lessen the amount of oils/butter used for pan prep, put mix into cupcake foils.
**Also, my gas range oven cooked them through at the 20 min mark, so I would recommend starting there :) If not done, add 5 min.


Directions

1. Preheat the oven to 350 degrees.
2. In a medium bowl, combine all the dry ingredients.
3. Using a mixer, mix all the wet ingredients (pumpkin through vanilla) in a large mixing bowl until well combined.
4. Slowly add the dry ingredients to the wet ingredients, careful not to over mix.
5. Fold in the chocolate chips.
6. Add batter to prepared muffin tin and bake 22-25 minutes, until a toothpick inserted in the center of the muffin comes out clean.
