Beth's Yummy Baked Oatmeal Beth's Yummy Baked Oatmeal

Ingredients

    5 cups rolled oats
    3/4 c. blueberries
    1/2 c. chopped walnuts
    2 apples, peeled, cored and finely diced
    1 T. baking powder
    1 tsp. ground cinnamon
    1 tsp. pure vanilla extract
    dash of salt
    2.5 c. skim milk
    4 eggs, beaten
    1/2 c. honey

Tips

Serve with milk or half-n-half. Top with brown sugar. Not included in nutritional facts.


Directions

The night before:

In a large bowl, mix all ingredients. Pour into an ungreased 9x13 baking dish. Cover and refrigerate overnight.

The next day:
Remove pan from refrigerator and allow to sit at room temperature for 30 minutes. Preheat oven to 350 degrees. Bake until lightly golden brown, about 30-40 minutes. Do not over bake.



Serving Size: 1/2 cup.
