    3 large eggs
    1/2 cup oil
    1/2 cup unsweetened applesauce
    2.25 cups sugar
    1 Tbls vanilla
    3 cups flour
    1.5 tsp baking powder
    1 tsp baking soda

    2 cup shredded zucchini

Directions

bake 350 for 15 min or until toothpick comes out clean
