Number of Servings: 16

Ingredients

    2# pork tenderloin, cut into chunks
    Red Pepper, chunked
    Green Pepper, chunked
    1 Large onion, chunked
    10 Medium mushrooms, I take the stems out and grill caps whole
    Zucchini about 2 cups sliced
    1 cup pineapple chunks
    2 Tbsp olive oil
    Seasoning salt
    16 long wooden skewers

Tips

You can really use any veggies you like, corn, fruits, different meats...get creative! Enjoy!


Directions

The bulk of the prep work is cutting everything up. Once I cut all the veggies, I place them in a large bowl and drizzle in the olive oil...using my hands, I make sure all the veggies get coated well.

Some people soak the skewers in water 20 minutes or so to keep them from scorching...I skip this step.

Fill up the skewers with the veggies, pineapple and pork. Sprinkle with the seasoning salt and place on grill. Cook until pork is completely cooked.
