Ingredients

    1 sweet potato sliced
    2 small/med zucchini sliced (about 3 cups)
    1 sweet bell pepper sliced
    8 eggs
    2 tbsp parsley
    2 tbsp butter

Directions

cook sweet potatoes (aprox 8 min) until soft, add remainder of veggies and cook until tender (al dente), whisk eggs really well, add black pepper to taste. Pour eggs over veggies. Cook on low until cooked through then broil until the top is golden. Sprinkle w/ parsley.
