Number of Servings: 2

Ingredients

    1 banana mashed
    2 eggs
    1/4 cup (or 4 tbs) coconut flour
    1 heaping tablespoon almond or cashew butter
    1 teaspoon coconut oil
    1 cup blueberries (i used frozen but fresh should be fine)
    cinnamon (per your taste)
    sprinkling of baking powder

Directions

mash banana
wisk in the rest of the ingredients
fold in blueberries
batter will be very thick

cook on low to no higher than medium heat. WARNING: these take MUCH longer to cook than traditional pancakes and are harder to tell when they are done. Be sure to not get too impatient so the insides cook. I turned them when they were browning up on the bottom and were staying together enough to flip. TRUST ME they are worth the wait!
