Ingredients

6 oz Greek Yogurt
2 tsp lime juice
1 tsp lime zest
1 1/4 tsp salt
1 1/2 lb Zuchini
2/3 cup chopped onion
1/2 cup cilantro chopped
1/4 cup egg substitute
1/3 cup flour
1/2 tsp pepper
1/4 cup olive oil
Directions
Heat oven to 200 degrees
Mix Yogurt and lime juice and lime zest and 1/4 tsp salt until smooth and set asside.
Shred Zuchini in food processor or shredding side of food grater.
Squeeze moisture out of zuchini by wrapping in a clean kitchen towel and ringing.
Combine zuchini, onions, 1/2 cup cilantro, egg substitute, flour, 1 tsp salt and pepper
Heat 2 tsps oil i large saute pan.
Add zuchini mixture in 1/4 cup portions and flatten with spatula.
Cook for three minutes flipping over half way through.
Make 3 batches for a total of 12 fritters.
Add 2 tsp of oil to skillet for each batch
Keep warm on cookie sheet in oven until all batches are complete.
Serving Size: Makes 12 fritters - one serving equal 3 fritters.
