Ingredients

    This calls for chicken - skip it

    3tbs butter, salted or unsalted
    1 entire leak
    1 celery stalk chopped fine
    1 onion medium chopped fine
    2 tbs parsley chopped fine
    3/4 cup chicken broth
    2 egg yolks
    salt & pepper to your taste

Tips

For a thicker stew you can add red potatoes or noodles but it will up carbs and sugars. avoid noodles or potatoes if you have bowel restriction.


Directions

butter the bottom of casserole dish. layer all vegetables in the dish and poor broth, cover & simmer one hour. Beat yolks lightly and add to broth & vegetables stirring constantly until it thickens.
