Directions

boil the potatoes, peel and chop each into 6 pieces

place onion, garlic and ginger in food processor until finely chopped.

Heat olive oil in a large pan (with a lid) over medium heat then add the onion mixture. Lower the heat and cook for a couple mins stirring constantly.

Add the spices and stir for a few moments then add the tomato paste and potatoes and continue stirring for 1 minute. Add the ground meat substitute.

Cover and simmer for about 1 hour checking occasionally to ensure it isn't sticking to the sides. add water as needed.

Serve over rice with chopped cilantro sprinkled over top!
