Ingredients

    2 ½ cups pancake mix

    1 egg

    egg white

    1/3 cup vegetable oil

    1 cup Lactaid

    1/3 cup sugar (white or brown)

    1 teaspoon vanilla

    1 teaspoon cinnamon

    1 apples, grated

    2 cup grated zucchini



Tips

Do not overstir or muffins may be hard and dense.


Directions

Heat oven to 425 degrees. Grease your muffin cups or use liners. In a mixing bowl, combine milk, egg, oil, and vanilla.
Add sugar and stir. Add pancake mix and cinnamon. Stir to combine.
Grate the apple and zucchini. Pat out excess water with paper towel
Fold in grated apple and zucchini.
Spoon into muffin cups, filling ¾ full. Bake for 13 minutes or until golden brown.

Serving Size: Makes a dozen reg. size muffins or 8-9 jumbo muffins. Serving size is 1 reg. size muffin.
