Ingredients

    1/2 cup pumpkin puree
    1/2 cup oatmeal (quick is good, chop a little using regular)
    Pumpkin pie spice
    Cinnamon
    1 tsp sweetener (optional)

Tips

Add in raisins and nuts for just a teensy bit more calories!


Directions

1. Preheat oven to 350 degrees. Grease a cookie sheet.
2. In a small bowl, combine pumpkin and oatmeal. Shake pumpkin pie spice and cinnamon as desired, and add sweetener. Mix well.
3. Using a spoon, drop into eight cookies onto the cookie sheet. Bake for 15 minutes or until done.

Serving Size: Makes eight cookies. YES you can eat ALL EIGHT cookies!

    Very Good
    Tasty but not sweet-so don't expect "cookie" sweetness. I liked the texture and flavor-make recipe x3 and spread it in a cookie sheet (sprayed with pam) and then cut into squares after baking. - 10/17/14
