Ingredients

    1 Whole Egg
    4 Egg Whites
    1/2 C Fresh Spinach
    1/4 C Chopped Red Onion
    1/2 C Fresh Mushrooms
    1 oz Fat-Free Ricotta Cheese
    Olive Oil Spray

Tips

Heat up your plate and your omelet will stay nice and warm throughout your breakfast experience. I heat up the oven and put my plates in the oven, when I start this process. If I have to make multiple omelet, I keep them warm in the oven, so we can all eat together.


Directions

Whip the eggs in a bowl until the yolk is nicely mixed throughout the egg white and then set the bowl set aside.
Spray a non-stick pan with the olive oil spray
Sauté the onions over a High heat; once they begin to sizzle add mushrooms and turn the heat down to Medium
Add the spinach when the onions are transparent
Remove the vegetables once the spinach wilts and set aside on a plate/bowl
Remove the skillet from the stove, re-spray the skillet with the olive oil spray, and then return to the burner
Add the egg mixture to the skillet
Add the vegetables to one half of the omelet, and then sprinkle the Ricotta Cheese on top of the vegetables
Allow the egg to cook until the under side is firm (but the top is still runny)
Gently turn half of the egg round on to the top of the vegetables (creating a half-circle) and allow to cook for another 1-2 minutes
Gently turn the omelet and cook 1-2 more minutes
Slide the omelet on to a plate and enjoy

Serving Size: Makes one huge lo-cal omellet

    Used whole eggs fresh from our chickens, so know I should redo nutritional numbers. Wish there was another way to do that. - 3/26/17
